Hi everyone! Still looking for a spotlight side dish this Thanksgiving? No problem, I've got you covered. Well, Spoon Fork Bacon has got you covered. I had a Friendsgiving game night over the weekend to show thanks and appreciation for my volleyball friends, here's a sample of what I served,
We've got sweet potato black bean empanadas, Brussel sprout and pancetta pizza, and turkey meatballs with (the friend favorite) chipotle cranberry barbecue sauce. As you can see, I put a twist on traditional Thanksgiving foods and this cranberry sauce was no exception. When I stumbled on to this recipe from Spoon Fork Bacon I couldn't imagine what else I'd use it on. Well, by the end of the evening it made its way onto just about everything. Dabbed onto the pizza, swirled into the sweet potato filling; it was particularly good over the vegan stuffed mushrooms. Basically, you could put it on dirt and it would taste incredible. Tart, smoky, and not overly sweet this would be great on a grilled cheese sandwich, or perhaps a version of eggs Benny with cornbread, maybe even mixed into plain yogurt with chopped pecans (did I take that too far?) This is all pending you have any leftovers.
